Gibbstone Highgate Estates Winery is located very far south in New Zealand, in the Otago region.  This cool area creates wines of high acidity, which match very well with the kinds of wines being produced there. 

In addition, the high altitude of the vineyard allows warm days and cool nights, allowing the vines to rest each night.  This is a special benefit for wine making, and is one that is not found in too many other wine making regions of the world.
